Where Will We Go?

The time has come for us to decide where our life is going to take us next semester, and we are clueless! Eric was accepted into the following two amazing schools so that he can continue his education since UVU doesn't have an engineering program, yet.

so, do we move to Logan or Salt Lake City? The huge thing right now is my job. I love working for Mountain America. I have excellent insurance and pretty good pay as well, I would really like to continue working there, if possible. There is one branch in Logan...the chances are slim. There are many branches in the Salt Lake area and our corporate offices are located in West Jordan (I have always wanted to work at corporate...the training department in particular.) so chances of a job transfer are better, but still not guaranteed. yikes! It is so scary to move and to change, but the thought of it all (when you take out the job situation) excites me! We will keep you updated on what happens for us!

Happy Valentines Day!

Happy Valentines to everyone! I really liked this Valentines, it was more like a Valentines weekend instead of a valentines day! First of all I came home from a really busy day Friday from being the only loan officer... and still feeling inexperienced mind you, to a house that smelled so clean! Eric had done some deep cleaning and washed all the dishes and it was the best gift anyone could give/get! On Saturday Eric woke up to go shooting with a friend from work so I took the advantage to sleep in since I've gotten sick. When I woke up was just about the same time that he was come home to bring me these...
So pretty! Eric knows me so well. I mean roses are pretty, but just not my style. He told the florist to come up with something purple and it's perfect! It has lasted so long and beautiful and has been drinking so much water! After getting ready for the day on Saturday we went to mall and Eric got some new pants and I got a new sweater that I have been eyeing for our Valentine gifts. It was really fun to spend the day together, then we went to Eric's parents and watched Australia, a really good, but really long movie!


mmm Don't those look delicious? On Sunday morning I woke up earlier to make Eric a Valentine breakfast. I made him bacon (he never gets it because I don't really like it and it also stinks, our house smelled like bacon all weekend!) and these chocolate waffles! I had never made them before but I saw the recipe and thought it would be a fun occasion to try them!

We put strawberries and cool whip on them...what else? I called it strawberry short-breakfast.

On Monday, since I work at a credit union, suckers, I had presidents day off and Eric had no school! We went to the matinee of Valentines Day (how appropriate) I loved it! After we took a wild and crazy search for pickling/canning salt (don't ask) and returned home to catch the bachelor making a huge mistake and, thanks to Andrea, made a delicious candied chicken dinner

Chocolate Waffles

1 1/2 C flour

3 tsp Baking Powder

1/2 tsp salt

1/2 C white sugar

3 Tbs unsweetened cocoa powder

1 C milk

2 eggs

4 Tbs butter, melted

and mix!

Everyone should try these at least once!

It also came with a recipe for a sauce for the top. I didn't try the sauce but if you do let me know!

1 Tbs butter, softened

3/4 C confectioners sugar

1/2 tsp vanilla extract

1 tsp milk

sauce should be stiff.

Valentines Crafting

I had no Valentine Decorations! I decided that I desperately needed to solve this problem so I spent a weekend dedicated to making Valentine crafts! It was super fun and I was very pleased with the results, maybe not so much the getting to them, but yes the results!

This Valentine Topiary has a story. I was very excited to make and it seemed so easy (you can find the tutorial here.) but I had my troubles... these troubles had to do with the glue. First of all the tutorial says to use E6000 (which I did end up using for this project) but I applied it directly to the Styrofoam ball, and I applied a ton of it. This glue is strong, and strong smelling, it is actually known to cause cancer in California (seriously, that is what the package said...the package also said "Do not use on Styrofoam.") anyways, this ultra-intense glue started to eat away at my Styrofoam ball! It was insane! So I decided, maybe I should just use regular tacky glue, you know the stuff that really sucks and shouldn't even really be called "glue." Well just by my tone you can tell that this was a lousy idea. with every heart that I glued the first would fall right off and I ended up throwing the ball across the living room, using some choice words, and almost getting grounded from crafting! Who ever said crafting was therapeutic? After begging Eric to allow me to continue my craft I decide to get a fresh ball, and start again with the E6000. This time I applied the glue to the heart and only just a tiny dot and I was good to go. I could see an end to this project! the rest was very easy, the moss was messy but nothing I didn't mind busting out my new Dustbuster for!

This Valentines Day wreath looks so pretty, and wasn't hard at all! I found the tutorial for this project here. The only downer to this project was that it was a little bit more time consuming. We had a Girls Night and just went to town on this one, we all pre-cut the felt before our girls night and I did that during a chick flick and some episodes I dvr'd of Saved By the Bell.

Just though I would also blog about a few other things that have been going on. Eric has applied for graduation at UVU which means that we don't have any idea what is in store for us in the fall, but we are looking forward to whatever it may be! Eric has applied for BYU, USU, and UofU so we will see where we end up, they are all really great schools and they all have an excellent engineering program so we would be happy anywhere!

By the way, This is Kevin our friends bird. He loves to play in the fake trees.

I also love baking bread! The only problem is that it takes so long, most of it is just waiting for the bread machine to be done kneading, rising, and baking but still I wish I could make more of it! This is the best thing I have ever purchased!

Our Days

So I've been neglecting this bloggy thing a little bit the past little while, and even when I finally get a post posted it is a lame-o you tube video. So I have been trying to find something to blog about. After Christmas and the rest of the Holidays Eric and I have gone back to our boring lives consisting of school and work and not much of anything else. I was looking at some of the blogs I love to read for inspiration on what I could blog about, and my sister-in-law, Krista, has some of the best, most entertaining writing, so I ventured onto her blog. After reading lots of funny stories, the outcome I got was that Eric and I need to have kids...and they need to be at least half as cute as these two!

Kate and Brooklyn are missed so much! We sent an adorable Christmas present to Kate this year and when she received it, she was sweet enough to give us the cutest thank you phone call, ever! I really love and miss these girls!

Some things that have really been going on, I started my job as a loan officer and it has been...okay. I do miss being a teller. I know what I am doing there and I have all the confidence in the world as a teller. I also loved being over there, helping people all day long, and being the go to girl for everybody's questions. Now I sit at my loan desk, sometimes I literally just stare at my computer, and I wonder if somebody is going to walk in the door and want to come to my desk instead of the teller line, but at the same time terrified because I have no idea what I am doing. I went to training for two days this week to learn about Real Estate loans, which was a nice getaway from my regular job. I always love going to training and I really think I would love working in that department someday. Who knows maybe Eric will be accepted into the University of Utah and we'll move up to Salt Lake and I can work there.

Eric started school again this semester and this is last semester at UVU and he will have his Associates degree. Now it is time to apply for schools, there are 3 in Utah that have Eric's program (Civil Engineering) So it is a little unsettling not knowing where you will be in the next few months.

Something for us to look forward to... on May 16th we will be setting sale on a Mexican Riviera Cruise!

New Year's Resolution.

No, my New Year's Resolution is not to post YouTube videos all year. I love this song! The first time I heard it I just thought it was a catchy song that I was going to continue to hear on my radio and jam to. After hearing this song more I began to really listen to the lyrics, and what a positive message it gives. My New Year's Resolution is to "live like I was dying" I'm going to live each day to the fullest. So to end this post, I'd like to say... I love you friends and family!

A Happy New Year!

Malia is so cute and was so excited to ring in the new year!

We had a fun New Years Eve party with Eric's family that started a whole weekend of celebrating. On Friday we had dinner at Eric's grandma's house in Mapleton with some cousins and afterwards we watched Night at the Museum 2, excellent movie! I can't wait to take a vaca back East hopefully soon so I can seen all those wonderful museums.

Today we finally had time to take down our Christmas decorations...but it was very sad! I love the way the house looks and feels at Christmas, but it is also nice for it to be more spacious.

We also went out to dinner together to Iggy's for the first time, let's just say it was a piece of heaven for Eric and it won't be the last time we eat there. There is no music, you actually hear the game that is on the giant screen right in front of your table, oh and the food was good too! After dinner we went to a Flash game with our friends Kyle and Gina. The Flash lost, but it was fun to just go and do something different.

Christmas was fun for us this year, until I got the flu, but we were very lucky and for some reason Santa thought that we had been good!

I got a bread maker and Eric got an Xbox, and we were blessed with a bunch more from our family and friends! I love giving to everyone at Christmastime.

Unfortunately I go back to work on Monday and Eric starts school on Wednesday...can't the holidays just last forever?
